I've been cooking! Delicious Chimichurri Recipe

Hello! So, I know you probably don’t come to me for recipes, but at the beginning of the year I got a Hello Fresh gift card so I’ve been trying out my hands in the kitchen quite frequently lately. Quick reality check - I rarely cook because I don’t enjoy trying to decide what to make or shopping for the ingredients, and then I’m always letting groceries go to waste. I have about 4 things I make - breakfast sandwiches, pancakes, fudge for Christmas, and Mac & Cheese for Thanksgiving (although only twice successfully…). Any other time I’m cooking it’s usually been because I’m on a diet of some sort, so it’s usually some basic AF version of grilled chicken, veggies, and sweet potatoes.

BUT I’m honestly so impressed with Hello Fresh so far. I had Freshly for almost 2 years because I wanted convenience and didn’t want to cook, but after a while I just couldn’t take the bland, microwaved meals anymore. To be clear, I am not sponsored by Hello Fresh in any way, I’m paying about $60 per week for 6 meals (3 meals, 2 servings each). Anyway, I can go into a full review of Hello Fresh another time, but below is their recipe for Chimichurri sauce that I discovered a couple days ago. It was so freaking good I feel compelled to both save it for my self and share it!

CHIMICHURRI

Ingredients

1/4 oz cilantro

1 med-large garlic clove

1/2 tsp cumin

1 lemon

2 TBSP olive oil

Optional: 1 chili pepper (the tini ones! Red or green)

Salt & pepper

Steps:

Prep: Zest 1 lemon. Quarter 1 lemon. Mince garlic. Finely chop cilantro leaves and stems. Thinly slice chili. If you love heat, leave the seeds in! If you can’t do spicy, take them out.

In a small bowl, combine cilantro, garlic, cumin, juice for 1 whole lemon, lemon zest. Season with salt, pepper, and chili to taste!

Quantity: makes enough to sauce 2 servings

I had this on top of pork tenderloin and it was amazing!! It’s also amazing on steak, tacos, etc. Enjoy!
